Chicken Panzanella Sandwich
Here is the ingredients for a favorite meal of mine from Weight Watchers. This setup will feed up to 4 people. Panzanella is the classic tomato and bread salad which now is made into a sandwich using the same ingredients plus grilled chicken. You can toast the bread if you like.
You will need:
4 skinless boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground pepper
4 teaspoons olive oil
1 teaspoon red-wine vinegar
1 teaspoon capers, drained and chopped
8 slices of country style bread
1 garlic clove, halved
8 large slices tomato
8 large fresh basil leaves
1. Spray a nonstick pan with nonstick spray and bring to medium heat. Add the chicken to the pan turning occasionally until its browned on the outside and cooked through. This usually takes 12 minutes.
2. While that is going on, combine the oil, vinegar, and capers in a small bowl.
3. Rub 4 pieces of bread with the garlic. Brush the oil mixture on the garlic rubbed sides of the bread. Put the chicken, tomato, and basil evenly on bread. Top with remaining 4 slices of bread. Cut into as many pieces as you want.
